Dave Markel: 1. Place flour in ungreased pan cook on med-high heat until dark. 2. In a separate pan add the butter and oil. 3. Add in diced pepper and onion. Cook 5 min. 4. Add loosely cut and smashed garlic, bay leaf, thyme and file powder and mix 5. Add turkey sausage and cook slightly 6. Add browned flour, diced tomatoes, and Cajon Seasoning 7. Add chicken broth, simmer for 20 min 8. Add largely cut catfish and shrimp. Cook for until fully cooked. 9. Serve over rice.
