Moses Maimon: my understanding is that omega 3's are healthy, as they are anti-inflammatory, while omega 6's are unhealthy, as they are inflammatory. well, so why is it not good to cook with flaxseed oil, which is so much higher in omega 3's than omega 6's, while it is considered healthy to cook with olive oil, which is actually much much higher in omega 6's than omega 3's? this makes no sense to me

Sana rex: No oil should be cooked. if you pick a good oil blend , check out Udo's choice. BUT NEVER use it for cooking. ontopic: How come a low smoking point oil like olive oil can be used at cooking? I taught is bad for cooking. somebody enlighten my please!
enliteneer: For cooking/dressing, the low polyunsaturated fat, high smoke point of the macadamia nut oil would seem ideal. But what's the shelf life of stable oils (coconut, mac, etc)? If mono/saturated fats aren't your thing, I've read Sacha Inchi oil has nearly 82% polyunsaturated, with an omega6:3 ratio of 1:1.
