Soak potatoes 20 min before cooking
Put pan in oven while its preheating
Boil potatoes beforehand to peel easier

Mike G: I do the same thing, except I cook the fries in oil.
lxmzhg: First incorporate the 2 tsp of tamari into the sliced potatoes to evenly coat them.
Then separately mix the other ingriedients to have a homogenious dry mixture.
Finally add the dry mixture to the potatoes.
This way you will ensure that everything is homogenious.
