Cut ripe tomatoes into quarters and squeeze out the juice. 2. Set pot on cooker over medium-high heat for about 45 minutes. (Stir occasionally) 3.Use fresh basil sliced to your preference. (We used about 4 cups per 2 gallons of juice) 4. Pour hot tomato mixture into a sieve and wind it until the juice has left the skin. (We had about 2 gallons of juice after sieved) 5. Put back on the cooker over medium-high heat and add basil. 6. Add salt and pepper to taste. 7. Let reduce for about an hour. (Ours reduced 2 inches) 8. Ladle into 1 pint jars leaving a 1/2 inch from the rim. 9. Wipe rim of jar. 10. Apply a warmed lid and twist ring tightly to ensure a good seal. 11. Listen for your top to pop and you know it is sealed. 12. Label and date.

Harold Shifflett: We do not put our tomato juice or soup in a boiling water bath. We have not had any product spoil. I know some people do. You could put the jars in a boiling water bath if you feel better about it.

Harold Shifflett: We do not water bath our tomato juice or soup and we have not had anything spoil. You have to have it at a full rolling boil when it goes in the jars, so it will seal. Good luck.
